Our cheesy dream began in the winter of 2018 over phone calls from our college dorms, crafting a fantastical dream of completing a cross-country road trip in a food truck, slinging grilled cheese to pay for gas (and beer). Despite lacking formal business education or culinary training, our enthusiasm fueled us to secure family funding and purchase our first truck. Opening our window for the first time on June 15, 2018, in North Conway NH, marked the beginning of our journey. By the end of summer, we had paid off the truck, our adventure had only taken us as far as Maine, but we’d
had a blast and even had a bit of beer money to take back with us.
Despite setbacks caused by the COVID-19 pandemic in 2020, including empty schedules and dwindling bank accounts, we pivoted to establish a fast-casual outdoor restaurant on the Kancamagus Highway. This move led to further success, culminating in the opening of two bustling restaurants by June 2020. With over 30 team members, mostly students, and doubling our sales once again, we navigated through uncertainty and emerged stronger. By 2021, with a flagship location in Portland and exceeding all expectations, we expanded to downtown Portsmouth NH by the end of 2022. In May of 2024 we are set to open our largest restaurant yet in the heart of North Conway, NH.
But we have not forgotten about our roots! We have three food trucks traveling all around New England and beyond, serving up those same famous grilled cheese sandwiches.
Now, with over 50 team members and a commitment to prioritizing their needs, we look forward to growing our Cheese Louise empire, spreading our cheesy dream into reality across the country.
