El Indio Tacos y Snacks, established in 1996, is a family owned & operated food truck/catering business located in the Tampa Bay area. We aim to bring you the finest - and most authentic! - Mexican cuisine without breaking your bank. Rosario Ulloa began “El Indio” back in 1996 at a soccer park in Palmetto, Florida. Rosario regularly attended her late husband’s soccer games where she realized she could make some extra cash by selling some of her Matamorros' family dishes as an easy to enjoy snack. She started selling out of coolers filled with tacos and drinks, and soon began to sell every weekend as a way to provide for her family. Rosario’s dishes became an instant sensation, winning over the hearts and bellies of players, children, and the community in general. Today, the Ulloa tradition lives on with the same sazones (beloved seasonings) used in every one of El Indio’s authentic Mexican dishes, including tortas, nachos, hamburgers and, of course, tacos! 

Miguel, Rosario’s youngest son, fully manages the food truck and catering business along with his wife, Yesenia, and their 4 year-old son, JJ. Together, Miguel, Yesenia & JJ bring a whole new energy to El Indio Tacos y Snacks - all the while staying true to the family recipes, culture and spirit that made Rosario’s snacks so memorable back in 1996.
